Spicy Gladstone Stuffing Serves: 6-8

Prep Time: 10-15 minutes

Cook Time: 1-1½ hours total

Ingredients

  • 10 cups bread cubes (around 500 grams, preferably day-old or slightly dried)

  • 3 cups chicken stock (divided)

  • ⅓ to ½ cup Gladstone Original Hot Sauce (go big or go mild—your call! Chipotle works too!)

  • 4 bratwurst sausages, casing removed

  • ½ cup butter

  • 1-2 tbsp oil (for cooking sausage)

  • 1 large onion, finely chopped

  • 2-3 celery stalks, finely chopped

  • Fresh sage and thyme, finely chopped (to taste)

  • 1 egg, beaten

  • 1 tsp poultry seasoning

  • Salt and pepper (to taste)

Instructions

  • Preheat the oven to 350°F (175°C). Butter up a large baking dish and set aside.

  • Cook the sausage: Heat 1 tbsp of oil in a large skillet over medium heat. Add bratwurst, breaking it apart as it cooks. Once browned, splash in half of that Gladstone Hot Sauce for a little extra heat! Set the sausage aside.

  • Sauté the onions: In the same skillet, melt the butter and add the chopped onions, scraping up the tasty bits from the sausage. Cook until softened and caramelized, about 10-15 minutes.

  • Add the celery and herbs: Toss in the celery, sage, thyme, and poultry seasoning, cooking until the celery softens. Remove from heat and let it cool slightly.

  • Combine: In a large bowl, mix the bread cubes, 1 cup of stock, and the sausage-onion mixture. In a separate bowl, whisk the remaining cup of stock with the beaten egg and add it to the stuffing.

  • Adjust the flavour: Add the rest of the stock until it’s as moist as you like, then pour on the remaining Gladstone Hot Sauce. Season with salt and pepper, and give it all a good mix.

  • Bake: Transfer to the baking dish, cover with foil, and bake for 30 minutes. Uncover and bake for another 25-30 minutes until it’s golden brown and crispy on top.

Pro Tip

  • Make Ahead: Want a head start? Prep it a day before, then just bake or reheat on Thanksgiving.

  • Spice Up the Whole Spread: Turn up the heat on your sides too—drizzle roasted carrots with olive oil, brown sugar, and hot sauce, or add Gladstone to crispy Brussels sprouts with bacon for an unforgettable spicy-sweet combo.
