Super Bowl Jalapeño Popper Dip

We’re fired up for the Super Bowl—because we love the game, but we really love the food. When it comes to football snacks, nothing beats a quick, cheesy, spicy dip loaded with flavour. With smoky heat from Gladstone Hot Chipotle Sauce, this is the kind of game-day snack that disappears fast. It is perfect for the big game, easy to prep, and feeds your whole team.

Whether you're hosting a party or just posted up on the couch, this creamy, smoky, and spicy dip is the ultimate game-day snack. Quick to whip up and impossible to resist, it’s got everything you need for a winning spread.

Your List of Ingredients

  • 3 (8 oz) packs cream cheese, softened

  • ½ cup mayonnaise

  • 1 cup sour cream

  • ½ tbsp garlic powder

  • 1 tsp onion powder

  • 1 tsp taco seasoning ( we love La Chula Roja Spice Blend)

  • ½ cup Gladstone Hot Chipotle Sauce

  • 1 ½ cups shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 1 large poblano pepper, diced

  • 6 slices bacon, cooked and crumbled (reserve some for topping)

  • 2 fresh jalapeños, diced (for topping)

  • 2-3 spring onions, chopped (for topping)

  • Tortilla chips for serving ( We love La Cocina tortilla chips)




Step 1: Let’s Get Started


1️⃣ Preheat your oven to 375°F (190°C).


2️⃣ In a skillet, cook the bacon until crispy, then set aside. Try not to snack on too much of it (we know, it’s hard). Drain most of the grease.


3️⃣ In the same skillet, sauté the diced poblano and corn for about 5 minutes until softened. Set aside.


4️⃣ In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth and fluffy. Add the sour cream, mayo, garlic powder, and onion powder, then mix until fully combined.


5️⃣ Fold in the sautéed poblano, corn, two-thirds of the bacon, Gladstone Hot Chipotle Sauce, and two-thirds of the cheddar and Monterey Jack cheese. (The rest of the cheese is for the glorious golden top.)


6️⃣ Transfer the mix to a 9x13 oven-proof dish. Sprinkle the reserved cheese on top and bake for 20-25 minutes, or until it’s hot, bubbly, and smells like pure magic.


7️⃣ Remove from the oven and top with the reserved bacon, fresh diced jalapeños, and chopped spring onions.


8️⃣ Serve warm with tortilla chips, crackers, or straight-up spoons—no judgment.
