Gladstone Sauce and La Chula Mexican Kitchen Collaboration

Delicious cauliflower florets marinated in buttermilk, Gladstone Hot Chipotle and Asada Rub. Covered with a dry mix of flour, cornstarch and Asada Rub. Then deep fried to perfection and tossed in a sweet and spicy (highly addictive) Hot Chipotle Glaze.

 

What you need

1 cauliflower head cut into florets

Marinade

  • 1 litre of buttermilk

  • 2-3 tbsp Gladstone Hot Chipotle Sauce

  • 4 tbsp Asada Rub from La Chula Mexican Kitchen

Dry Mix:

  • 2 cups All purpose flour

  • 1 cup corn starch

  • 6 tbsp Asada Rub

Sticky Chipotle Glaze

  • 1 cup Honey (we love @BCbuzz)

  • 90 grams butter

  • 70-140 ml Hot Chipotle Gladstone Sauce




Let’s Get Started


First, cut your cauliflower into bite-size florets.


Next, prepare the marinade for the cauliflower by combining buttermilk, Gladstone Hot Chipotle sauce, and Asada Rub. Allow the cauliflower to marinate for at least 2-3 hours, preferably overnight for the best flavour.


Prepare the dry mix by combining flour, cornstarch, and additional Asada Rub in a bowl. Heat cooking oil in a pot until hot and ready for frying. Dredge the marinated cauliflower in the dry mix and carefully add it to the hot oil. Ensure not to overcrowd the pot and fry the cauliflower in batches. Have a plate lined with paper towels ready to rest the florets once they turn golden brown.


In another pot, prepare the sticky chipotle glaze by combining honey, butter, and Gladstone Hot Chipotle sauce. Bring the mixture to a boil, then let it simmer for 5 minutes.


Finally, toss the golden brown florets in the sticky, spicy sauce. For an extra touch, sprinkle with sesame seeds and cilantro to impress your guests.
